As soon as the weather turns I get this primal urge to bake. This week I made Rebecca Rather's Apple-Smoked Bacon and Cheddar Scones. Oh my...these are sooo good. Savory and soul satisfying. The fresh ground pepper has a wonderful kick. The recipe is from her "Pastry Queen" cookbook.
The recipe calls for apple-smoked thick sliced bacon which I happened upon at a local farm market here in Cornwall, NY. What an amazing bacon; I am not sure regular bacon will work for me anymore...have I become a bacon snob? Is there such a thing as a bacon snob? At times we much ask ourselves the bigger questions in life...
